Tortellini Tomato Spinach Soup, recipe by Kathleen Daelemans
(serves 4)
1 T olive oil
1/2 c minced onion
1 minced garlic clove
4 to 6 c low sodium chicken broth
1 14 oz can chopped tomatoes
1 package fresh tortellini (I use Buitoni 3 cheese)
salt and pepper
1 package fresh baby spinach
1/4 c freshly grated Parmesan
In large soup pot, heat oil. Add onion and garlic, stir often for about 7 min. Add broth and tomatoes, turn heat to high and bring to a boil. Add tortellini and cook according to package instructions. When almost done, add fresh spinach and season to taste. Serve immediately with a sprinkling of Parmesan cheese.
So easy and oh, so tasty!!
Listen--what's that? It's me, knocking at your door--ready for lunch!! This looks yummy, I think I'll try it out for lunch with my neighbor next week.
ReplyDeleteOoh, yum! I love spinach AND tortellini. This goes in my recipe box.
ReplyDeleteLooks really good! I'll have to save this for when it cools off and the craving for soup begins.
